From one generation to another.......
The wondrous, precious tuber called the truffle has been sought after by man for centuries. The most precious truffles in the world come from three small areas. Perigord in France, Alba in northern Italy and
Acqualagna on the Italian east coast.
They are found in a few other areas but these three places are renowned for their quality and taste of the tubers and for their ability in making great products from them.
For months we followed our noses round the truffle areas of Italy until these exceptional products were found; made by one of the oldest companies in Acqualagna.
Following the rhythm of the seasons, the family of Marini Azolini has been gathering and trading in the various varieties of truffles, which grow naturally in the rich territory where the fattoria is located.
Each truffle variety is gathered in a specific period of the year:
White truffle
(tuber magnatum pico)
from 1st October to 31st Dec.
Summer black truffle, “Scorzone” (tuber aestivum vitt.)from 1st May to 30th November
March truffle
“Marzuolo” (tuber borchii vitt.or tuber albidum pico)
from
15th January to 30th April 
The following Acqualagna
truffle products are offered:
White Truffle extra virgin Olive Oil (Condimento Aromatizzato al Tartufo Bianco).
Summer black truffle balsamic vinegar (Aceto Balsamico di Modena al Tartufo 3%).
