From the historic city of Lucca, the Colle di Bordocheo Estate is a few kilometres from Lucca in the beautiful Capannori hills.
It is the southern part of Tuscany with Pisa , Florence and Sienna to the North. These small estates and rugged hillsides lend themselves to the growing of Olives and there are many small groves.
The method of cultivation follows years of tradition as does the pressing and extraction of the oil. By following the methods that have been established for many generations a beautiful oil of exceptional balance is produced year in and year out.

The family pride themselves with the quality of
their oil. Many consider that this small region of Tuscany produces the very best olive oil, being softer and more subtle than the oils from the centre and north of Tuscany. Some of this is due to the varieties of olive tress that they cultivate and lend themselves to this region. The Bordocheo oil is a mixture of Frantoio, Leccino, Maurino and Pendolino varieties but they keep the percentages a secret as it is this that gives the oil its outstanding characteristics.
The olives are harvested early in the season and this gives the oil and agreeable bitter aftertaste.

This is often the sign of a traditional quality oil .The oil has a delightful herby aroma with a suggestion of artichoke , beneath which sweet almond can be detected. It is a slight oil and a little piquant. The green hints on the nose become full and complex on tasting. It is a first class dipping and salad oil to be used sparingly on special occasions.
