From Umbria the heart of Italy.
Umbria is the Region just south of Tuscany and north of Lazio and to the east of Marche in the very centre of Italy and has no coast.
The Suatoni family owns and manages this estate and overseas its olive oil production in its own mill.
The estate is 1 km from the historical polygonal walled city of Amelia in the heart of south Umbria, with a population of some 12,000 and being 405 mts above sea level.
This land has a mild climate and suits the cultivation of olive trees. The main olive varieties are Moraiolo, Leccino and Rajo. 
The ground is devoid of parasites and no anti-cryptogrammic substances are used. This results in a beautifully balanced oil that is certified organic and of course dop.

The olive groves total over 1000 trees, 80% of which were planted after the great freeze of 1986 which destroyed many of the old trees.
These trees produce an extra virgin olive oil with a very low acidity. Helped by the fact that they are harvested early in the season (early November) and the acidity is always below 0.15%
It is a green colour with a delicate smell and a cool taste with a touch of almonds. It is a very good all round olive oil that is best appreciated on salads and in dipping.
