Fact Sheet - Three Regions Collection - Galantino Organic

Galantino is our Puglian oil that we have selected to include in our famous three regions collection.
Puglia is renowned for its fine vegetables and this oil from the heart of the region will be wonderful on all your vegetable dishes, especially roast vegetables. It is a very fine general purpose oil that suits salads such as rocket and is recommended for pasta dishes and traditional Italian frying.

Michele Galantino is the third generation tending the family oligola and coratina olive groves and has become a Mastro Oleario.

Some would say that the region of Puglia (known to the English as Apuglia), the long strip of land that forms the heel of the Italian boot, is the home of Italian olive oil. The estate is situated on the coast of the Adratic north of Bari in the beautiful medieval town of Bisceglie.

The region of Puglia produces more olives than anywhere else in the world. The olives are harvested when they are in a perfect state of ripeness in October to December.
The olives are gathered by hand and fall gently into ’hammocks’ where they are collected and taken as quickly as possible to the mill for milling and pressing.

The quality of the olives is enhanced by the care taken in annual pruning and a drip irrigation system. ensuring the best organoleptic qualities.

The great stone olive mills crush the olives and they are then cold pressed and the resulting olive oil is stored in their cellars until bottled.

This area of Puglia is rich in ancient olive trees that give its name to an oil known for its quality and more important its stability from year to year. The region is very strict in enforcing its DOP status on the growers which ensures the quality of the regions oils.

This oil is a true taste of how the top olive growers of the area have made Puglian oil the most renowned in Italy. This oil has an ORGANIC certification (reg.EEC2092/91) and is attested by AIAB.
