Fact Sheet - Galantino Single Variety

Single variety oils from Puglia , produced by the Galantino family from the Coratina and Ogliarola olives in order for you taste the unusual qualities of these two very different varieties. The Coratina oil is best used for dressing vegetables, on bruschetta and grilled meats. The Ogliarola oil is best used as a dressing for fish, seafood , white meats and delicate meals.

Galantino produce their single variety single estate extra virgin olive oils from olive groves in the family estate in the heart of the region.Michele Galantino is the third generation tending the family Ogliarola and Coratina olive groves and has become a Mastro Oleario.

Some would say that the region of Puglia (known to the English as Apuglia), the long strip of land that forms the heel of the Italian boot, is the home of Italian olive oil. The estate is situated on the coast of the Adriatic north of Bari in the beautiful medieval town of Bisceglie.

There are two Single Variety olive oils available. Both are produced from olives of one single variety ,from a grove with only that variety in that grove and that gives you the true flavour of only that type of olive. The Coratina oil is 100% the oil from Coratina olives. It is green in colour and has an intense fruity aroma with hints of grass. Its flavour is intensely fruity with artichoke aftertaste and a pleasant bitter and spicy finish.


The Ogliarola oil is 100% the oil from the Ogliarola olives. It is a golden yellow colour with olive green reflections. It has a delicate fruity aroma with hints of grass and flowers. The olives are harvested when they are in a perfect state of ripeness in October to December. The olives are gathered by hand and fall gently into ’hammocks’ where they are collected and taken as quickly as possible to the mill for milling and pressing.

The great stone olive mills crush the olives and they are then cold pressed and the resulting olive oil is stored in their cellars until bottled.

This area of Puglia is rich in ancient olive trees that give its name to an oil known for its quality and more important its stability from year to year. Most Olive oils are a blend of varieties and it is unusual to be able to offer single variety oils
