Fact Sheet - Three Regions Collection - Oleum Salutis Fructus

Oleum Salutis Fructus is our Ligurian oil that we have selected to include in our famous three regions collection. This very gentle general purpose oil has the typical flavour one expects from a good Ligurian oil. It tastes flowery and fruity and has no particular strong flavours. It is an oil that takes on flavours instead of being overpowering. It is wonderful on fish, light salads and traditional Ligurian pesto dishes.

The Anfosso family have a piece of land clinging to the side of a hill just outside the town of Chiusavecchia above the ancient port of Imperia.

It is steep, hard, stony land, terraced by generations of people that must have been fanatical and passionate to turn it into the ordered olive grove it is today.

Growing all the way up the hill between the dry stone walls are the famous Taggiasca olive trees that cover most of the area in this pool of land set back from the western end of the coast of Liguria.

When we pulled into the driveway we thought we were about to draw another blank. In this area it is incredibly difficult to find small operations that make their own oil, as everyone surviving has become a bottling or preserving plant. The liveried van and the neatly stacked piles of pallets gave all the appearance of yet another oil processing plant, albeit a very small one.

Alfredo Anfosso soon reassured us, his father Davide still works his precious 10 hectares of land above the family buildings. Alfredo and Alessandro run the bottling and packing plant while their father produces a small olive harvest, timelessly working the narrow stony old terraces with special machines and often by hand, a labour of love.

Its DOP and fully guaranteed, it’s the pride of the family and the top product that they make.

When they finish the few days of pressing their own fine oil, the mill turns to the business of making money again and starts work on the oils from other farms and processing the products that fill the shelves of the warehouse.

When you try “Oleum Salutis Fructus” you will be tasting the real Ligurian oil from a long family tradition and made by a passion and belief in the local product that few have retained in the past fifty years.
